Kaiserschmarrn (Pancakes)
Ingredients
5 eggs, separated
50 g sugar
250 g flour
3/8 l cream
a pinch of salt
Sultanas and pine nuts according to taste
Shortening
Sugar or icing sugar for dusting
Preparation
1 Beat the egg yolk and sugar until frothy. Gradually stir in the sieved flour, milk, salt, sultanas and pine nuts. Finally, fold in the stiffly beaten egg whites.
2 Pour the mixture into a pan with plenty of hot oil until about 1 cm high, fry until golden-brown on both sides and shred into small pieces using two forks.
3 Dust with sugar or icing sugar.
My Tip
This is excellent with cranberry and pear compote or Zwetschgenröster (plum compote).
