Zirmertorte (Zirmer Tart)
Ingredients
8 egg whites
180 g hazelnut
180 g sugar
40 g dark chocolate
a pinch of cinnamon
a pinch of ground cloves
1/2 lemon peel, grated
Butter for the tin
3 tbsp. Rum or Kirsch
3 tbsp. cherry jam
500 g cherries or sour cherries, cooked
1/2 l cream
30 g chocolate
Preparation
1 Beat the egg white to a stiff foam. Stir in the grated hazelnuts, sugar, grated chocolate, cinnamon, ground cloves and lemon peel.
2 Fill a well-greased baking tray and bake at about 180° C for 30 minutes.
3 When the tart has cooled, pour the rum or Kirsch over it, cover with cherry jam and decorate with the halved and stoned cherries.
4 Beat the cream until it is stiff, cover the tart with it and sprinkle with the chocolate shards.
